I have always been passionate about cooking and the art of the table, overflowing with imagination and creativity. Today I am a chef, better known as Manu, from a farming and wine-growing family in the south-west of France, my native region, where my love and passion for the profession was born, where I was taught and passed on the knowledge, the taste, the touch, the quality of a noble or modest product, the sense of smell, the appearance, all these elements combined to recognise the best of a natural product.As a child, watching with an attentive eye this complicity and orchestration carried out by the hands of a chef, I knew without a doubt that this would be my vocation.
During these last years of learning and travelling, without forgetting the old practices and techniques that I had been transmitted, I dare to provoke and modernise gastronomy without denaturing the product while bringing a creative aspect to it, a transformation where flavours and colours enter in perfect harmony, a cuisine situated between land and sea, never seen anywhere else.
